This 70% natural cacao is made with pure cacao mass, produced from carefully selected fino de aroma cacao beans and panela, a traditional Colombian sweetener made from gently dried sugar cane juice. The cacao is non-alkalized and full-fat, retaining its natural cacao butter content and authentic flavour profile without chemical treatment. We do not use any refined white sugar – only panela, which preserves a more complex flavour and reflects the natural origin of the cacao.
With a natural cacao butter content of approximately 52%, the cacao delivers a rich mouthfeel and supports the absorption of naturally occurring nutrients. Natural cacao is valued for its content of antioxidants, theobromine, and essential minerals – especially magnesium, calcium, potassium and iron, and is traditionally associated with sustained energy, focus, and overall well-being. It also contains a wide spectrum of vitamins, particularly A, B1, B2, B3, C and E. Unlike alkalized cocoa powders, this cacao preserves its natural colour, aroma, and complexity, making it ideal for authentic cacao drinks and chocolate preparations.
The cacao originates from hacienda located near the town of Puerto Lleras in the Meta department of Colombia. It is produced within an initiative, which focuses on sustainable cacao farming, controlled fermentation, and quality-driven post-harvest practices. Thanks to its clearly defined origin, this cacao is classified as single origin (one region) and single estate (one finca).

Origin, Farmer & Terroir
This cacao comes from Meta, Colombia, where it is grown by Nelson in cooperation with local workers and local cacao initiative. Meta is the second most deforested department in Colombia, and the initiative actively protects 100 hectares of native forest inhabited by tapirs, sloths, rare anaconda species, and dozens of protected bird species.
In addition to environmental protection, Cacao from this region supports improved cultivation and harvesting practices, creates local employment, and contributes to better living conditions in a region long affected by internal conflict. Cacao beans are hand-sorted and fermented under controlled time and temperature conditions in barrel fermenters. Standardized fermentation and drying protocols result in high-quality fino de aroma cacao with a distinctive, mildly woody cacao-nutty profile and subtle notes of honey, banana, and butter.
What is Fino de Aroma?
Fino de aroma is a designation used for cacao varieties with exceptional aromatic and flavour qualities. It represents only a small fraction of global cacao production and is most commonly associated with Criollo and Trinitario varieties.
