Cocoa adventure in Colombia: You want to taste this!

When we say that at Kakaw Co+ we know our cocoa "from bean to cup," it's not just a phrase. We regularly stand on the land where the cacao trees grow, communicate with the farmers who care for them, and oversee the entire process from harvest to processing. This year, we took one of you with us – Janke won this trip in our summer competition.

Why Colombia?

Colombia is considered one of the most diverse countries in the world – not only in terms of nature, but also in terms of flavors. It is here that cocoa with a unique sensory profile grows: delicate, fruity, with notes of citrus, red fruit, and a slight earthiness. That is why it is referred to as fine flavor cocoa.

From seed to fermentation

Our journey took us straight to the plantations, where we could see how cocoa is grown in agroforestry systems – together with bananas and coffee trees. This maintains the natural balance and keeps the soil rich in nutrients.

In addition to the Colombian vibe itself, it was also a powerful experience to observe the fermentation of cocoa beans – a process that determines the final flavor. Farmers use wooden boxes in which the beans undergo controlled fermentation for several days. The temperature gradually rises, the beans change color, and begin to develop their typical aroma. Fermentation is followed by slow drying in the sun – a key step for stability and quality. 

Cocoa as part of culture

Cocoa in Colombia is not just a raw material. It is part of the identity and traditions. We had the opportunity to participate in a cocoa ceremony, where cocoa is used as a symbol of connection – between people, nature, and the community. You can see cacao everywhere – from street art to cafes and cacao shops. Cacao is mixed with a special mixer – a molinillo – and combined with cheese, waffles, almojabana (sweet bread) or achirras made from corn flour.

After a quick tour of Bogota and visits to local suppliers, we started in the Huila region, from where we import one of your favorite varieties. Luis Fernando showed us around the plantation and masterfully cut open a cocoa pod in front of Janka.
